Achari Hot Chicken Wings
The Chinese style hot chicken wings at Domino's was my favorite since it was introduced long back and I somehow reverse engineered it and it was commonly on my cooking list last year when I was in Helsinki.. While planning for a Sunday lunch during my kid's winter vacation, cooking explicitly on her request, I thought of re-doing the stuff, but this time with a little twist.. I planned a Indo-China Fusion in my Hot Chicken Wings...
Thus came out my bottle of Mango Pickles, the original "Aamer Aachar" and spoon or two of the stuff was mixed to the marinade.. Then the usual grill and serve stuff followed but the final product came with a distinct tangy taste of mango pickles instead of the usual soy sauce and chili sauce one.
The recipe is as follows:
600 gm of Chicken Wings (with skin)
1 tablespooon of garlic paste
1/2 tablespoon of ginger paste
1/2 teaspoon of garlic powder
1 teaspoon of Worcestershire sauce
1 tablespoon of Green Chili Sauce
1/2 teaspoon Kashmiri Mirch Powder or Paprika Powder
1/4 teaspoon Turmeric
1/4 teaspoon Black Pepper Powder
1/4 teaspoon Chaat Masala Powder
1 tablespoon Cornflour powder
1 teaspoon vinegar
2 tablespoon Oil
Instructions
Take the chicken in a large bowl. Mix the Ginger Paste, Garlic Paste , Mango Pickle, 1 tablespoon oil, Worcestershire sauce, Green Chili sauce, Kashmiri Chili Powder, Turmeric,some Black pepper powder and vinegar to the chicken and marinate. Added salt as per taste. Keep the bowl aside for marination for at least 1-2 hours, in the refrigerator; more longer is better.
Take a metal grill dish. Cover it with aluminium foil. Then smear 1 tbsp of oil all along the surface of the dish.Add the cornflour in the bowl of marinated chicken and mix well. Then put the chicken wings one by one in the dish. Put the remaining marinade over the chicken pieces. Sprinkle some black pepper powder, garlic powder and the chaat masala powder on the top. Add some water from the side of the dish so that the wings are semi-submerged.
Put the dish into an Grill Oven at 250-275 degree centigrade for 30 mins till the top of the wings are roasted and brown in color and the water has dried into a gravy.
Turn the chicken pieces and glaze them with the gravy. Add some more watr ,if required (this is to keep the chicken moist and juicy and avoid it from getting dry). Grill for 10-15 mins more and repeat the same. Continue this for 2-3 times till the outer layer of the chicken is semi-crispy and dark brown in color.
Take it out of the oven and serve Hot.
